Delicious aromas waft again from the kitchen windows of the former Chelsea Diner restaurant in West Brattleboro, Vermont. In the morning, the air is filled with the scents of omelets, bacon and sausage, waffles, pancakes and more. In the evening, Afghani cooking permeates the dining room with Middle Eastern-inspired and Mediterranean dishes. &emsp;The location is, in fact, home to two separate restaurant ideas: Saffron Restaurant and the Royal Diner. &emsp;The newly opened two-in-one restaurant represents the hard work and investment of three men (originally four) who met in the United States after arriving as refugees from Afghanistan. Reza Jawidan, Abdul Rostami and Orfan Hussain Zada became friends, gained management and restaurant experience, and pooled their talents and resources to pursue this dream. &emsp;The history of the former Chelsea Diner as a well-known, busy restaurant led the three men to add traditional American breakfast and lunch fare to their business. They hire separate staff members who use the same kitchen during the daytime for breakfast and lunch, and a different staff comes in for dinner hours while the partners manage both. The diner offers a typical American breakfast and lunch menu with just a few Middle Eastern additions: shakshouka for breakfast: a traditional Middle Eastern and North African recipe of eggs poached in a rich, spiced tomato sauce popular in North Africa and the Middle East. Chicken shawarma, cooked on a vertical rotating spit and served with flatbreads, or falafel wraps, also are available at lunch. &emsp;The Saffron Restaurant — where the owners recommend reservations — is named for the expensive spice used in the dishes and the golden-yellow flower it comes from. Some of the restaurant's décor coordinates with this vibrant yellow color. Saffron features dinners that entice visitors with an array of Middle Eastern-inspired and Mediterranean dishes. Looking for something new for your palate? Try an Afghan specialty like kabuli pulao, the national dish made with carrots and large, tender chunks of lamb, or dishes with Persian and Turkish influences that blend yogurt, mint, and sweet flavors. Saffron's menu also features traditional Middle Eastern choices such as khoresh gheymeh, a lamb stew with yellow lentils, tomato sauce and cinnamon; kabobs of grilled beef tenderloin or chicken; and ground lamb and beef seasoned with saffron and other spices, served with saffron rice. Among the vegetarian options are fattoush salad, kashk bademjan — roasted eggplant blend — and ashak, vegetarian dumplings. &emsp;And there's more. If you're looking for something cool and creamy on a hot day, you can get frozen custard from the setup they run in the back of the building. Royal Frozen Custard is open seven days a week from noon to 8 p.m., offering 18 flavors and a variety of toppings. "Frozen custard is different from regular soft-serve ice cream because it's made with egg yolks and has less air," Jawidan said.He added that it gives it "a richer, denser texture and more pronounced flavor." &emsp;The business partners are doing well now, but they faced a rocky start with their first rental property. The young men, including a fourth partner, Zaker Noori, spent at least $100,000 they had saved and worked from January through March 15, 2026, to clean and renovate that space before opening. Customers loved the food and word spread through the community, Jawidan notes. But nothing prepared them for the sudden shutoff of their power and water that forced them to close in early April, a result of a landlord not paying utility bills, Jawidan says. Once community members of Brattleboro and beyond tasted the Middle Eastern foods served at Saffron, they were determined to help it reopen in the area, Jawidan explains, adding that they are grateful for their support. &emsp;"Lots of emails and social media posts from people said they loved our food and asked how they could help," Jawidan said. "It was an emotional time, between loss and trying to come back." &emsp;Sages Pub in downtown Brattleboro hosted two pop-up nights when Saffron could serve its food, and Top of the Hill Grill owner Alex Lotz put them in touch with Bo Foard of the former Chelsea Royal Diner as a potential location. A GoFundMe campaign raised $22,000 to help the men move forward. &emsp;Although Saffron/Royal Diner is open five days a week, the staff and owners work all seven days. Monday and Tuesday are their prepping days, one for Saffron and one for the Royal Diner. &emsp;Now, former patrons from Chelsea and the previous Saffron are returning. "People have a lot of history of coming here in the past; that feels very nice," Jawidan says.
