Bubble and Squeak: A Boxing Day Classic

While it takes a different shape, the idea is the same: to use up the holiday's leftovers in a more creative way than just reheating sides. The core components are potatoes, cabbage and meat (often ham). The vegetables, seasonings and other additives are decided entirely by what's taking up the real estate in your fridge. Bubble and Squeak Recipe adapted from allrecipes.com ½ head of cabbage, sliced 3 slices of bacon, diced (substitute olive oil for vegetarian) 1 onion, thinly sliced 1 cup cooked ham, cubed 1 Tbsp. butter 3 cups potatoes, baked and thinly sliced ½ tsp. garlic powder ½ tsp. paprika Salt and pepper to taste Instructions Start by cooking the cabbage in a medium saucepan with a small amount of water until tender. Set aside. Cook bacon and onion in a cast iron skillet until onion is soft and bacon is cooked. About 5 minutes. Add ham and cook until heated through. Add butter and mix in cooked cabbage and potatoes. Season with desired seasonings and cook until brown on the bottom. Mix and brown again. Note: Bubble and Squeak can be made in burger-sized patties or as a scramble and is often served with a fried egg overtop.
