Warm the Winter Months with Summertime Favorites: Crispy Baked Fish

My kids absolutely devour it every time. This recipe is also incredibly flexible. Not a mustard fan? Leave it out. Want more herbs? Add basil, dill or even a dash of Old Bay. And you're not limited to haddock — cod works perfectly too. From start to finish, this dish comes together in under 20 minutes and requires no special skills or equipment. Ingredients 1 pound fresh haddock Salt Pepper For the topping: 2 Tbsp. mayonnaise 4 Tbsp. salted butter, room temperature 2 tsp. Dijon mustard 1 tsp. garlic powder 1 cup panko breadcrumbs 1 tsp. dried basil Lemon zest of half a lemon Juice of half a lemon Instructions Preheat the oven to 425 degrees Fahrenheit and prepare a rimmed baking sheet by spraying it lightly with cooking spray. Set it aside. Carefully pat dry both sides of the fish filets and then season with salt and pepper. Place them on the baking sheet. In a bowl, mix together the mayonnaise, salted butter, Dijon mustard, garlic powder, panko breadcrumbs, basil, lemon zest and lemon juice. You can mix with a spoon or fork but really getting in and mixing it with your hands works the best. Once fully mixed, carefully and evenly spread across the fish filets.
