Autumn Flavors Savored: Veggie Pot Pie

As the weather begins to cool, I always find myself craving comfort foods — warm, oven-baked meals that fill the house with delicious, cozy aromas. Pot pie is one of my go-to dishes this time of year. Wanting to try something a little different, I decided to make a vegetarian version, swapping out the traditional chicken or beef for hearty mushrooms. The result? A rich, flavorful filling that's just as satisfying, if not more so. What I love about this recipe is how simple and adaptable it is. You can easily add extra veggies like spinach, sweet potatoes or whatever you have on hand. It's also perfect for meal prep: the filling can be made in advance and stored in the fridge or freezer, ready to assemble when you need a quick and easy weeknight dinner. I actually made the filling a couple of days before assembling the pie, and it made dinner on a busy night a breeze. While homemade pie crust is always a treat, don't hesitate to use a store-bought crust if you're short on time — it works beautifully here. Veggie Pot Pie Recipe adapted from www.101cookbooks.com Ingredients 4 potatoes, cut into 1/2-inch pieces 3 medium carrots, cut into 1/2-inch chunks 1/4 cup extra-virgin olive oil 1 small onion, chopped 3 stalks celery, chopped into 1/4-inch pieces 1 1/4 tsp. salt 1 cup chopped mushrooms 4 cloves garlic, chopped 1 tsp. fresh thyme 1/3 cup all-purpose flour 1 3/4 cups vegetable broth 2/3 cup heavy cream 1 cup frozen peas 1/3 cup chopped chives Zest of one lemon 2 pie crusts (store-bought or homemade) 1 egg (for egg wash) Instructions Make the Filling: Start by boiling the potatoes and carrots in a pot of water for 7 to 10 minutes, just until tender (but not mushy). Drain and set aside. In a large skillet, heat the olive oil over medium-high heat. Add the onion, celery and salt. Cook, stirring often, until the onions begin to brown and caramelize. Next, stir in the mushrooms, garlic and thyme. Cook for another 2 to 3 minutes. Reduce the heat to medium, sprinkle the flour over the mixture and stir well to coat. Let the flour cook for about 1 minute. Slowly add the vegetable broth and heavy cream, whisking constantly to avoid any lumps. Let the mixture simmer for 8 to 10 minutes, stirring frequently, until thickened. Remove from heat and stir in the peas, cooked potatoes and carrots, half of the chives and half of the lemon zest. Let the filling cool completely before assembling the pie. Assemble and Bake: When you're ready to bake, preheat the oven to 425°F, positioning a rack in the center. Roll out both pie crusts. Butter your pie dish, then sprinkle the remaining lemon zest across the bottom. Line the dish with one crust, leaving a bit of dough overhanging the edges. Spoon the cooled filling into the crust, spreading it evenly. Top with the second pie crust and trim the excess dough so there's about 1 inch hanging over the edge. Seal the edges by pressing them together, then fold and crimp however you like — using a fork or your fingers for a decorative edge. Cut a few slits in the top crust to let steam escape while baking and brush the top with the egg wash. Place the pie on a baking sheet and transfer it to the oven. Immediately reduce the temperature to 375°F and bake for about 1 hour. Check the pie after 40 minutes — rotate it for even baking, and if the edges are browning too quickly, cover them with foil. Let the pie rest for a few minutes before slicing. Serve warm, and enjoy a cozy, satisfying meal that's perfect for the season.
