Fresh from the Farm: Garden Salsa You Can Make at Home

At the Cornucopia Project's Educational Farm, late summer brings sun-ripened tomatoes and colorful peppers, which signals the arrival of our much-anticipated annual Young Farmers' Salsa Competition. Each year, our Young Farmers grab their baskets and head into the fields to harvest ingredients such as onions, garlic, spicy and sweet peppers, cilantro and juicy tomatoes straight from the vine. Then, it's time to get chopping! They create unique salsa recipes from classic chunky salsas to sweet-and-savory blends. Some go bold with hot peppers, others add edible flowers for flair, one team chose all gold ingredients for their recipe, and all get a chance to wow our community judges. These colorful, nutrient-packed ingredients are readily available at local farms, farmers' markets, grocery stores, or even your backyard garden. Making salsa is a delightful way to embrace seasonal eating and is simple enough for children to get involved every step of the way. Fresh Farm-to-Table Salsa A fun, flavorful recipe the whole family can make togetherIngredients:4 medium ripe tomatoes, chopped1 bell pepper (any color), diced1 small red onion, diced1 clove garlic, minced1 small hot pepper, finely diced (optional; remove seeds for less heat)¼ cup fresh cilantro, choppedJuice of 1 limeSalt to taste (start with ¼ tsp)1 tsp honey or maple syrup (optional, for a touch of sweet)Instructions:Wash and prepare all your vegetables. This is a great opportunity for children to practice their knife skills under adult supervision.In a mixing bowl, combine the chopped tomatoes, diced peppers, onion, garlic, and cilantro.Squeeze lime juice over the mixture and stir well to combine.Add a pinch of salt, taste, and adjust the seasoning as needed.
