Homemade Greens Pasta

I have found what might be the greatest hack for saving your wilted greens from the trash… and I know you've got some. I can't be the only one who buys a container of baby spinach (or any greens for that matter) and ends up throwing some of it away. It seems as if as soon as you take it home, it's already on its way out the door. In little time, you can turn those greens into homemade pasta that is vegan and made with whole-food ingredients. All you do to transform those old leafy greens into a fresh pasta, is throw them in a food processor with some flour and a touch of olive oil. (recipe adapted from plantyou.com) Ingredients: 3-4 cups of greens 1 cup of flour 2 Tbs of olive oil Mix until a dough is formed and knead a bit further on a floured surface. From here, you can get creative with your pasta shapes, but to save time I flattened mine into a disk and cut with kitchen shears to create one-inch pieces. Boil until soft and you have the easiest homemade pasta. I noticed mine breaking a part a bit while boiling, but as long as you're gentle and don't make the pasta too thin, the shapes should stay whole. You can serve this plain with some butter and parmesan or amp it up with a freshly made green sauce that is equally as simple. In a blender, combine: more greens 1 small garlic clove ¼ cup water (adding more as needed up to ½ cup) a handful of cashews lemon juice In a saucepan, add the sauce and cooked pasta until incorporated. My finished product may look like a pile of green mush, but this is one plate of pasta that you won't regret eating.
